Hi Tracy, you could make the apple filling a few days in advance and keep it in the fridge in an air tight container, knowing that the apples will turn brown and soften slightly as it sits. (The filling is already slightly brown because of the cinnamon, so it's not off-putting.) If you'd like to store the filling for longer, freeze it until you're ready to use it (up to 3 months).
