Hi, Barbara. Why not bake it on Wednesday, and save the traffic jam in the oven on Thursday? It will keep just fine overnight, and you can re-warm it if need be. Baking from frozen is fine, it will just take longer. If you don't have a pie shield, try putting some foil around the edges BEFORE you put the pie in the oven, and taking it off after 40 minutes.
