My Husband and I started making "make ahead" pie filling last year after a visit to a local orchard for applesauce apples. We ended up preparing the filling and then freezing it in ziploc bags to pull out and use at a later date. I pulled a bag out and used it 6 mos after we froze it and it was wonderful! I just let it thaw out a bit on the counter, pour it into my pie pan, cover with crust, bake and voila....easy as pie!
