Use Organic coconut can milk in the pie when making pumpkin pie. The crust did well with olive oil.I added one cup of brown sugar. As the pie needs some sugar in the pumpkin. Nothing sweet in the coconut can milk. Do not put it in the refrigerator. The coconut will harden. It was tender and flaky too. I did not roll it but just put the crumbs in the bowl, mixed with melted butter and water and salt. smooth out with fingers and glass to flatten the pie crumbs. put crust in refrigerator, to cool. I did it over night but four hours is good too. 12-26-16
