I just made these, and they turned out great! I substituted sugar for an alternate sweetener recipe: Ingredients:
• 1/2 cup raw Monk fruit sweetener (powdered)
• 1/4 cup Stevia/Erythritol blend
• 2 tablespoons maple sugar
I also added an additional egg (1 egg).
They were delicious soft, the muffins rose just Right! I also made a regular powder sugar glaze to top it off because these are on the slightly less sugary side, but still had a very good amount of sweet, taste to them. Next time I would probably add another teaspoon of Stevia\erythritol. Otherwise, I was very satisfied.
