We're sorry to hear that your muffins didn't turn out as expected, Gloria! Most often when a baked good turns out a bit dry it's because a tad too much flour snuck its way into the mixing bowl — we recommend either using a kitchen scale to weigh your ingredients or using the fluff and sprinkle technique for measuring flour in volume. Another reason the muffins might have been a bit dense is if the wrong gluten-free flour blend was used. Our Gluten-Free Pumpkin Muffin recipe uses our Gluten-Free All-Purpose Flour blend rather than our Gluten-Free Measure for Measure Flour, the blends were designed to do different jobs so we don't recommend using them interchangably. We hope this helps for future baking adventures.
