Hi Kathym, because this peach cobbler recipe requires the full depth of a 9" X 13" pan to bake properly, you'd be better off baking a double recipe in two 9" X 13" pans than trying to bake it on a sheet tray with 1" sides. If you happen to have a baking pan that is 13" X 18" with 2" sides, then this would work for the doubled recipe. Baking time might be a bit longer but check at the time recommended in the recipe and reset your timer from there.
When doubling a recipe, for best results we recommend using the weight measurements rather than doubling by volume. If you don't have a scale, be sure to measure your flour carefully, using this method.
