Hi Sheila! Any yeasted or sourdough bread including keto and gluten free breads will be best at 78 degrees. As for non-sourdough bread without yeast, such as salt rising bread 95 degrees would be best. Bread risen with baking powder or baking soda will not need the proof box since it is employing an entirely different reaction to raise. Happy baking!
