I've used this GF pie recipe for a few years now for my holiday baking and also for my highly requested quiches. It is a truly flaky and tasty crust that seems to be the perfect balance. My kids who are avowed haters of all things gluten free have even raved over the crusts. I have found that if the crust seems to crumbly and unwilling to cooperate when rolling out, try adding a few drops of cold water until it becomes more pliable. It will make your crust assembly much easier and it bakes up flaky and delicious without looking like it's been through a war.
