Hi Steve! We don't generally recommend swapping out gluten-free flours as they are pretty carefully formulated. The Measure for Measure flour, in addition to having xanthan gum, also has cellulose in it and is not simply our gluten-free all purpose flour plus xanthan gum. Happy baking!
