Fresh Market grocery stores have been selling “crispy” cookies (almond, cranberry almond are our favorite) which my husband adores. The cookies are spread out and caramelized in the process— all counter what you want as professional bakers but oh so addictively good.
Luckily for me (the perpetual dieter) and unluckily for him, we don’t have a a Fresh Market in our town. I have searched for recipes and nothing has come up, I remembered reading this blog post and will read the science of cookies post. Meanwhile, do you have a recipe that achieves a crispy, caramalized flat crispy cookie (with a long, long shelf life)?
