Cookies made with all-butter do tend to spread a bit more as they release their moisture during baking. However, it sounds like you’ve figured out a technique for getting fresh-out-of-the-oven cookies that don’t spread in mere minutes. Bravo. As for your comment about GMO flour, you will be happy to hear that all of the wheat flour King Arthur sells is 100% GMO-free. So give those cookies another go without having to worry about having to go gluten-free! Happy cookie baking! –Kye@KAF
