I used this recipe to make a GF wedding cake for a bride who is celiac.

I followed the instructions exactly as you wrote them and I ended up with beautifully moist, rich cakes! The bride and her guests demolished the two tier cake!

Also, something I’ve noticed is that the flavour of the coconut seems to come out as it sits, resulting in a cake that tastes similar to chocolate macaroons.
