Hi Celeste, thanks so much for writing and sharing your twist on this cake. I certainly think it would be fine to substitute another oil for the butter. My preference would be coconut oil, but olive oil would probably work (it just might affect the flavor). Would love to know how it goes if you give it another try. And your beer caramel sauce sounds lovely! - Alyssa
