I’ve been sending baked goods care packages from NYC to LA this entire quarantine. Although I hate the thought of freezing all the deliciousness, I’ve found that refrigeration and freezing + additional ice packs has worked exceptionally well.
I put my baked goods (especially if they contain chocolate which most do) In the fridge first (after they’ve cooled) for about an hour or so, before overnight in the freezer, completely wrapped in both wax paper, aluminum foil, plastic wrap and then a zip-lock bag with all of the air removed; yes, it’s a lot, but considering all the time and love put into baking everything, that one last step is worth it.
For cookies, I too do the stacking method in a ziplock bag.
I’ve been saving packaging materials (And boxes) from Other shipments (giving a good spray of Lysol to everything) and have found that padding the box (and the ice packs works great.
By the time everything gets to Cali (usually about 1-3 days) it just has to sit at room temperature and/or put in the oven for 10 mins, before it’s consumed.
I’ve done this method successfully, once a week for almost 5 months now, and even with the massive heatwaves on both coasts have not had issues. I even sent a full home cooked meal this way and it was still frozen when it arrived.
**banana bread; Wrap in 2 layers of plastic wrap and put it in a paper bag before freezing. It will maintain its moisture and flavor best this way.
