I just sent my grandmother an Assemble-Your-Own-Birthday-Cake kit. A large cookie tin held two layers of cake quite nicely (separated by waxed paper), and old yogurt containers held the frosting and grated coconut. The cookie tin also has the advantage that it's pretty sturdy, so it will help prevent the cake layers from getting banged up. It was apparently quite a hit - she doesn't like baking any more, but assembling a cake was something she could do!
