Actually, I've had great luck sending birthday/holiday cakes! I don't get to see my mother- and grandmother-in-law for their birthdays or holidays like mother's day, so I usually send cake. What works best is bundt cake (usually in one of my decorative pans) covered in glaze and allowed to cool. (A bundt fits almost perfectly into the medium-size priority mail box! Just enough room for a layer of bubble wrap around it.) After it's cooled, I wrap it in plastic wrap and then aluminum foil and freeze it. I mail it frozen, and by the time it arrives it's moist and perfectly thawed, and something about the freezing seems to make the glaze not stick to the plastic wrap. I've done eggnog cakes, chocolate/coffee, etc. The idea is to get a nice dense style cake so it won't crumble if it moves around some. (The freezing helps with that too.) I've gotten lots of raves! (and brownie points, always a good thing with the in-laws ;) ).
