I get the appeal of the simplicity. But I have found that it's really all about having enough space in the box for packaging. I have successfully shipped assortments including even the most delicate cookies like almond crescents and Mexican wedding cakes by:
- double bagging with tissue paper in between (bakery bags work great)
- lining the box with bubble wrap (or air pillows I've saved)
- loading the box from heaviest/ sturdiest to lightest/most delicate
- putting (saved, if possible) packing peanuts between layers and on top
- and if you set up a personal account (easy) with Fed Ex ground or UPS you can set up your own shipments at home (so no waiting in line), the cost are lower and shipping times reasonable.
As my father said: why would you spend all the time and effort to bake these beautiful cookies and not make sure they arrive that way.
