We haven't tried it Ben, as there's isn't really a standalone liquid ingredient to replace with sourdough starter. Normally we suggest replacing 1 scant cup flour (113 grams) and 1/2 cup water (113 grams) with 1 cup (226 grams) of your starter. Since oil counts as a fat, the only liquid-like ingredient would be the pumpkin, so you'd be replacing some of the pumpkin which could lessen the pumpkin flavor. You're welcome to experiment!
