Also, National Geographic did a test which compares cakes made with different sugar substitutes. http://news.nationalgeographic.com/news/2013/07/130717-sugar-substitutes-nutrasweet-splenda-stevia-baking/ The only sugar substitutes that came close to replicating the texture and taste of sugar were Xylitol and Erythritol. I have seen both at my local Natural Grocer and on Amazon.
