I'm actually surprised that they respond to as many as they do!! There's only a handful of employees and they do everything from the baking, running the store/bakery and teaching all the baking classes. If the nutritional info is that important there are a Million websites that you can cut and paste the ingredients into and they'll give you exactly what you want, including scaling up and down.
