can the oil be replaced with applesauce and use egg whites instead of whole eggs to cut down on the fat ? Yes, you can certainly make those substitutions. The doughnuts will be very different; not nearly as tender, somewhat rubbery, and a bit drier. But they should still taste pretty good, aside from their texture - PJH
