The long answer is that it is a standard recipe writing convention that when a recipe lists an amount and then the way it is processed, the amount should be measured prior to the processing. However if, for example, your recipe listed 6 pounds of peeled and cored apples (as opposed to apples peeled and cored), you would then want measure the apples only after they are peeled and cored.
