Just made these with a few adjustments:). We live 30 miles from town.....didn't have vegetable oil or shortening, so substituted coconut oil, and had used all the molasses....so substituted Barley Malt Syrup....checked and used 4 ounces instead of the 3 in the recipe. They turned out beautifully! Checked them at 16 minutes......gave them another 30 seconds and they're just as you said.....cakey on the exterior, chewy toward the center. You can taste the coconut, but it's definitely not over powering.......I like it. Will make these again to send to our son in Germany...glad they keep well!
