I tried subbing organic coconut oil (which is solid at room temp in my house) for shortening in a frosting recipe and it was NOT a success. First, the flavor was detectable, and second, the oil separated out of the mixture in little droplets. Maybe it would work in some cases, like a cookie or cake, but not all.
