I'm not going to do vegetable shortening, and I don't have access to my preferred sub (Earth Balance) right now in the Back of Beyond, so it would be great to know what was unacceptable about the all-butter version. Who knows? I might find it just fine...or I might need to look for another cookie. Thanks!
