Hi Karen! I think you would be just fine with homemade cake flour and we usually recommend 2T of cornstarch as the best choice. No need to alter the water at all, you should be all good to go by just modifying the flour. I hope you enjoy these guys and Happy Baking! Jocelyn@KAF
