I would like to make a substitute for Velveeta's Queso Blanco (http://www.walmart.com/ip/Kraft-Velveeta-Queso-Blanco-Cheese-16-oz/20854147). Which cheese would you suggest I use instead of the cheddar? Monterey Jack (or pepperjack)? A mild white cheddar?
