Hi Becky, caramels keep very well when stored in the refrigerator or freezer. You can refrigerate or freeze the caramels in slab form, or once individually wrapped. They will also last fairly well at room temperature, but tend to get stickier and may eventually crystalize if left for several weeks at room temperature.
