Just made these and they are cooling in the pan, waiting excitedly to be eaten! I don;t have a candy thermometer, but used a thermapen instead. I was a little unsure when to take them off because the middle was at 248 but the edges were still around 240... Hopefully it sets all right, but I'm sure it will taste fine either way. Can't wait to cut into them tomorrow monring
