Now I haven't tried the recipe version with boiled cider, but I did use a can of apple juice concentrate that I boiled down to 1/2 cup the night before with cinnamon, nutmeg and cloves in it. The cooled product was slightly thicker than real maple syrup, very sweet and just a bit tart. I would have liked to use citrus peel in it too for more bite in the finished product but I think it turned out well in the caramel
