I'd really like to reinforce Pat's recommendation. A candy thermometer (and the general 'don't stir' rule) makes candy making *almost* as simple as boiling water. I make marshmallows in about 5 hands-on minutes. Will save my sermon on converting to weight measuring for baking until another time.
