Hi Shirley,
There aren't really any "wrong" apples to use. Choose a type that you enjoy the flavor of, and go from there. Blending different apples can give you a sauce with more in-depth flavors. Try some tart apples along with some sweeter apples, and see what you think. My sauce always includes some Granny Smith, I like the pucker. :) ~ MJ
