My mother's best friend (who passed away in March at age 92) made the best applesauce. She used to add red cinnamon candies to hers (I have no idea how many of them - not a ton though). She also gave me the best hint on making applesauce: use a Foley food mill. There are also other brands of food mills (which I found out by Googling). This way you don't need to peel or core the apples. Just cook them and run them through the food mill. You will get a smooth sauce this way. It saves a lot of work if you want to make a lot of applesauce to freeze. I haven't made any for years, so I may try this recipe this fall.
