I make a years supply of applesauce each winter. (In California, we pick apples through January.) I never add sugar or peel the apples. Using an apple corer/slicer, I cut the apples and then add water and cinnamon. I then cook them until soft and puree them a little using a stick blender. It's fast and easy. I freeze the applesauce and enjoy delicious applesauce all year long. I like the idea of adding vanilla and will try that next time.
