Hi Wendy, boiled cider is cider reduced to the consistency of a thin syrup: You can substitute apple juice concentrate (the kind you find in the freezer at the grocery store) in some recipes if you don't have boiled cider. I'm not an expert on canning, but the method you suggest does sound consistent with comments made by other bakers who do can! Barb@KAF
