I make applesauce frequently -- especially when we have pork chops or pork roast. I never thought of a slow cooker (mine is usually stove top or oven), but I may try it on low overnight so we can have applesauce on pancakes. I have found that frozen concentrated apple cider or juice is a good substitute for boiled cider. Also, try substituting a little brown sugar for part of the white sugar for a different depth of flavor.
