Hi Gail! If by the 3-cup pan, you mean this one (or others this size) which is the 6-cup Bundt with a 3-4 cup bakeable capacity, you want to look for recipes calling for about 1 1/2 cups of flour. The only Bundt-specific recipe we have like that is this one for Cider-Gingerbread Bundt Cake. This recipe for chocolate cake should fit. Not a lot of recipes are that size, but most are a standard recipe calling for 3 cups of flour and you can just cut them in half. If the recipe calls for an odd number of eggs, just round up when you cut the recipe in half, rather than using half an egg. Some favorites for the other types you requested are Lemon Bliss Cake and Red Velvet Cake.
