Oh PJ. If you go to http://pastrieslikeapro.com/2013/06/no-fail-pie-crust/ there's a whole tutorial on pie crusts including how I've made a two crust pie for over 25 years. You are right. I use 1/3 for the top and 2/3 for the bottom. I also don't double a single recipe, it's too much crust. Anyway, love what you do.
