I've never been much of a pie baker, but these are wonderful suggestions! I just wish I had access to some of the types of apples suggested- we don't get much variety or freshness in Florida. This is perfect timing, too: my future niece-in-law is 3 months pregnant and has been having a wild apple pie craving. :-)
