Pie crust baking isn't as much fun since I was diagnosed with celiac disease three years ago but...I totally agree with PJ about Northern Spies. They are the only ones I use and I buy enough to make pies all year and put the filling in the freezer. My secret ingredient is applejack. Everyone loves my apple pies and I think it's the appljack + the Spies. Spies are available at farm stands and orchards in October.
