My personal favorite apple variety for baking pie is the Haralson. I have a recipe from an old cookbook that I spent years trying to get right. Always turned out far too sweet and mushy depending on the variety I tried. Even using Granny Smiths did not work. Until I found the Haralson. The recipe uses brown sugar and vanilla and becomes butterscotch and apples. My husband looks forward to apple season almost as much as I do now.
