I love Northern Spy for apple pies, but thats partly for the Romance of it, Winesaps and Yorks make very good pies too.
My very best pie pan has a drip edge to catch overflows. I wish I could find another one. You wouldn't care to stock them would you? Its a 9inch stainless steel pie pan with drip edging. My normal pie pan is a 9 inch cast iron pan which holds a lot of apples over 5 cups without problems and has a handle to boot. I got the idea from a friend who volunteered at a colonial house museum but kept it for the practicallity -- the depth prevents overflows, the handle is convenient and the cast iron browns the bottom crust nicely.
