I have seen most of these before in other places on your blog, but thank you very much for this compilation. It has been bookmarked as a handy reference. The one tip that I shall definitely try is to test different apples in the microwave. Typically I use several varieties, but this test will help take some of the randomness out of it. Sorry to say, though, that I won't be using shortening in my crust: I use Michael Ruhlman's 3:2:1 recipe with lard and butter in about equal quantities for the "2", and it comes out quite satisfactorily for my tastes. Vive la difference!
