I was taught to barely stir the GF batter so they do not become tough in baking. So I usually mix all ingredients just to the point of fully blended and then let the dough rest in the bowl for about 5 minutes before stirring in nuts or chips for the final blending before putting in pans. I also sometimes use the tiny chocolate chips which stay in the upper half of the loaf better.
