A 93-year-young lady at church makes the best pie dough using lard (and the best gooseberry pie), but otherwise just like you do. She's given us younger members - heck, we're only in our 50's and 60's! - a lesson a couple of times. She came up with a recipe by making dough then going back and figuring out how much of each ingredient she used. And she said the same thing. Get your hands in it. Learn how it feels when it's just right. To check what we were making, she used feel and sight. I don't know that I'll ever master it, but I guess I have over 30 more years to try :-) . She and a small group of helpers also make wonderful noodles, too.
