From the big giant zucchini I make Mock Apple Slices. Mix together and set side 1/2 tsp. CINNAMON, 1/4 tsp. NUTMEG, 1 Heaping cup of SUGAR. Cook 10 cups PEELED, SEEDED, SLICED THIN ZUCCHIN (LIKE FOR APPLE PIE and 3/4 cup LEMON JUICE. Cook about 10 minutes till tender. Immediately add the set aside sugar, cinnamon and nutmeg mixture. Mix well and let cool completely. When completely cooled add 1 cup set aside crust mixture. CRUST: Blend together 3 sticks UNSALTED BUTTER, 2 cups SUGAR, and 4 cups FLOUR. (I use M4M flour) Measure 1 cup crust mixture to mix with cooked, cooled zucchini. Spread 1/2 remaining crust mixture in 10x15 pan. Bake at 350 deg. for 10 minutes. Top with zucchini. Top with remaining crumb crust. Bake at 375 deg.40 45 to 55 min. until mixture starts to bubble and top crust begins to slightly brown.
