Zucchini can be a comfort food too. Mix about 8 cups cubed z with one onion chopped, a can of cream of chicken soup and 1/2 cup sour cream, salt and pepper to taste. Melt a stick of butter and add about 8 oz Pepperidge Farm herbed bread crumbs and a tsp ground sage.
Mix about 2/3 of bread mixture in with the z mixture and put in a greased casserole dish. Sprinkle top with remaining crumbs. Bake at 350 till tender and top golden brown. DELISH
