All these recipes are great and I would add yet another good way of using up a harvest of zucchini - make pickles! I picked them using a regular dill cucumber pickling recipe (there are lots of them on the net!) and my husband swore from the time he tasted them, to use zucchini pickle slices on his burgers instead of cucumber pickles. I must agree with him - the taste of zucchini pickles on a burger tasted so much better than the regular pickles. Just try for yourself!
