You can find an array of recipes to satisfy your personal tastes, but the basic idea is to cut the zucchini in half lengthwise, then scoop out some of the center, leaving about 1/4 to 1/2 inch thick flesh intact. Keep the scooped out parts and saute it with your filling. The filling can be whatever suites your fancy - I use ground beef, heavily seasoned and combined with anything I have on hand (peppers, onions, tomatoes, mushrooms, etc.) - just be creative and have fun with it.
Fill the 'boats' and top with lots of shredded cheese, then bake at 350 until the flesh is tender and the cheese is bubbly. Serve and enjoy.
